Processing Technology: Selected from the lamb outer loin section. The membrane of the outer loin is removed while the dorsal fat is retained. The two ends are trimmed to be even, then the pieces are folded in pairs with the muscle membrane facing outward. After pre-cooling and shaping, four pieces are packed in one bag, and the final packaging consists of ice packs and foam boxes.
