Processing Technology: Selected from the hind shank of young lamb. The hock joint of the lamb shank is sawn off, 3cm of the muscle is trimmed off, and the shank is cleaned thoroughly. The thicker end is placed facing outward, and the shanks are grouped by ten pieces each. Each carton contains 10 bags.
