Processing Technology: Selected from the front shank of young lamb. The hock joint of the lamb front shank is sawn off, 2.5 cm of the muscle is trimmed off, and the shank is cleaned thoroughly. The thicker end is placed facing outward, and the shanks are grouped by ten pieces each. Each carton contains 7–8 bags.
