Processing Technology: Selected from the outer loin of young lamb. The fat cap is removed while the muscle membrane is retained. Both ends are trimmed to an even length, then the strips are folded in pairs with the muscle membrane facing outward. After pre-cooling and shaping, eight strips are packed into one bag, and the final package is placed in a foam box with ice packs.
